Chocolate Mousse
Ingredients
300ml whipping cream
1 tsp vanilla
2 egg yolks (at room temperature)
1/4 cup sugar
2 egg whites
1/4 cup sugar
Method
| 1. Chop and melt chocolate on a low heat on stovetop using a double-boiler. Leave to cool. Use dark chocolate if you want dark choc mousse, milk chocolate if you want milk choc mousse and white chocolate for white chocolate mousse. |
| 2. Whip together cream and vanilla. Place in fridge. 3. In a large bowl (make it you largest bowl) Beat egg yolks and first 1/4 cup of sugar. Until very thick and pale. Egg yolks must be at room temperature. |
| 4. In a separate bowl beat the egg whites, with beater on high, until thick and frothy. Add in second 1/4 cup of sugar and beat until thick and glossy. Set aside. |
| 5. Slowly add the cooled melted chocolate the egg yolk mix. Mix thoroughly, maybe very thick. |
| 6. Add half the beaten egg whites to the chocolate mixture. Mix until smooth . Add cream, mix until smooth. |
