Feijoa, Ginger and Banana Loaf
Found this really yummy recipe. Its fruity and moist with a scrummy chewy top.
Going to leave the recipe here so I don't forget about it.
Ingredients
Cake 125g butter 1 cup sugar 1 mediun over-ripe banana 1 1/4 cups plain flour 1 teaspoon mixed spice 2 teaspoon ginger 1 1/2 teaspoons baking powder 1 1/2 cups feijoa (about 4-6 large feijoas) | Icing 2-3 tablespoons cream cheese 1 cup icing sugar 1 teaspoon lemon juice walnuts to decorate |
Method
Melt butter in a large saucepan over low heat. Remove from heat and add sugar and banana. Beat well, then add the flour, spices and baking powder. Fold in ginger and feijoas.
Place mixture into prepared tin and bake for 50-60 minutes. Leave to cool before icing.
Combine cream cheese, icing sugar and lemon juice. Give the icing a taste test and adjust to your liking. Spread over loaf and decorate with walnut halves.
